Creamy coconut corn chowder with black beans & kale

Recipe Ingredients for Corn chowder

1 tsp olive oil
1 small onion
1 clove garlic
1 c light coconut milk
2 c almond breeze
2 c black beans
500 g frozen corn
4 c kale
2 t curry powder

Recipe Directions for Corn chowder

  1. Heat oil in large pot.

  2. Sautee onion and garlic until golden.

  3. Add coconut & almond milk, curry powder and half of the corn. Simmer until cooked through.

  4. Using immersion blender or food processor, process soup until smooth. If using food processor, transfer back into pot.

  5. Add chopped kale and remaining corn. Cook through.
