A creamy comfort soup brimming with corn and flavor

Recipe Ingredients for Corn Chowder

6 potatoes medium, peeled and cubed
3 stalks celery, chopped
2 onions, medium, chopped
3/4 cups carrots
1/2 cup flour
6 chicken boullion cubes
2 cans creamed corn
3 cups frozen corn
3 oz Bacon, crisp drained, crumbled
1 pint cream, fat free

Recipe Directions for Corn Chowder

  1. Peel, prepare, and chop the potatoes, celery, carrots, and onions. In a large (6 qt) soup pan, add enough water to just barely cover the vegetables. Bring to simmer and cook till done, stirring and adding water, if needed. In a blender or hand shaker, add 1/2 c flour to 1 c cold water. Add slowly to vegetables, stiring constantly. Lower heat to prevent scorching and add 5 cups water, 6 bouillion cubes, and bacon. Return to simmer and simmer for 20 - 30 minutes, stirring often. Add creamed corn and whole kernel corn. Return to simmer slowly, stirring often. (The soup scorches easily). Then add the fat free cream and return just to simmer and remove from heat.

  2. Keeps well in refridge. Reheat recommended by microwave at 80% of power.
