Recipe Ingredients for Corn Chowder

1 tbsp. olive oil
1 medium yellow onion, diced
3/4 tsp. kosher salt
3 tbsp. yellow cornmeal
2 c. skim milk
1 c. chicken broth
16 oz new potatoes, peeled and diced
15 oz corn kernels
4 T fat free half and half

Recipe Directions for Corn Chowder

  1. 1. In a medium (2 1/2 quart) saucepan, heat the olive oil over medium flame.

  2. 2. Add the onion, and salt. Saute until onion is soft and translucent.

  3. 3. Add the cornmeal, milk, chicken broth, potatoes, and corn to the saucepan. Simmer for 15 minutes.

  4. 6. Ladle into bowls, and garnish with chives.
