Scrumptious Chowder. Could have clams or crab added for a richer chowder with a bit of crumbled, crisp bacon as ganish for flavor and for those not watching their Energy Density.

Recipe Ingredients for Corn Chowder

3 cups low fat chicken broth
2 3/4 cups hash browns, thawed
2 1/4 cups corn, frozen whole
1 cup chopped onion
1 cup green pepper, chopped
1/2 cup chopped celery
1/2 t Thyme
1 1/2 cup milk, 1 percent
3 T Flour, All Purpose
1/2 t ground red pepper or pepper flakes

Recipe Directions for Corn Chowder

  1. Combine first seven ingredients and bring to boil, cover and reduce heat and cook for 20 minutes.

  2. Transfer 2 1/2 cups to blender and blend till smooth. Add all other ingredients, process and add back to pot. Cook over medium heat until thick and bubbly.

  3. Serve with toast points.

  4. Serving size is 1 1/2 cups
