Recipe Ingredients for Corn Chowder

3 tablespoons butter
2 cloves garlic, minced
4 tablespoons shallots (minced)
1 jalapeno pepper, roasted and minced
1 cup chicken broth (low sodium)
3 cups frozen corn (white kernels)
1 pinch salt
1 cup heavy cream

Recipe Directions for Corn Chowder

  1. Melt butter in med saucepan and saute garlic and shallots until tender.

  2. Stir in jalapeno and cook a minute longer. Add corn and chicken broth and bring to a boil.

  3. Reduce heat and simmer 5 min.

  4. Puree soup in food processor, leaving some kernels whole. Return to saucepan and add salt and cream.

  5. Reheat without boiling.
