Creamy chowder chock full of corn and bacon. A true comfort food. This recipe can be "lightened" by using low fat milk and canadian bacon or pancetta.

Recipe Ingredients for Corn Chowder

8 oz. bacon, diced
1/2 c. onion, diced
1/2 c. celery, diced
30 oz. creamed corn
30 oz. kernel corn, drained
1 potato, cubed
32 oz. light cream
4 tbsp. butter

Recipe Directions for Corn Chowder

  1. Render bacon in large, heavy bottom stock pot. When bacon is crispy, add onion and celery. Sweat until onion is just tender.

  2. Add corn, potato and cream. Heat on low until hot. Add butter, salt and pepper.
