A corn cassarole, perfect as a side or even a main dish with a salad to accompany.

Recipe Ingredients for corn casserole

4 oz unsalted butter
2 cups corn kernels
2 eggs
3 cups corn kernels
1 cup LowFat Plain Kefir
8 oz Monterey Jack
1/2 cup cornmeal
4 oz Mild Diced Green Chiles
1/2 cup grated parmesan cheese

Recipe Directions for corn casserole

  1. Preheat oven to 400.

  2. Melt butter and blend butter, 3 cups corn kernels, and eggs.

  3. In large bowl, mix all other ingredients except parmesan cheese.

  4. Put into casserole dish or into muffin pan. sprinkle with parmesan cheese.

  5. Cook for 45 minutes, until tops are lightly browned and inside is cooked.
