baked corn muffin casserole from scratch

Recipe Ingredients for Corn Casserole by Julie H

1 cup butter, softened
2/3 cup Masa Harina flour
1/2 cup water
3 cups frozen corn, thawed
1/2 cup corn meal
2/3 cup sugar
4 T heavy cream
1/2 t salt
1 t baking powder

Recipe Directions for Corn Casserole by Julie H

  1. Blend butter until creamy and add flour and water.

  2. Add thawed corn and blend on low speed, leaving some corn whole.

  3. In another bowl, mix sugar, cream, salt, B.Powder.

  4. Mix into first bowl and combine by hand.

  5. Pour batter into a 9x13 pan, smoothing the surface with a spatula.Cover with foil.

  6. Place THIS pan into a 11x14 pan and filled half way with hot water.

  7. Bake 50-60 minutes at 375 degrees.

  8. Remove and let sit 10 minutes before serving.
