vegan salad made with fresh corn and cabbage. great summer salad.

Recipe Ingredients for corn and cabbage salad

3 ears corn, blanched
1/2 head of cabbage, chopped
1/2 red bell pepper, seeded and chopped
3 tomatoes, seeded and chopped
1/2 red onion, chopped
2 cloves garlic, minced
1/2 cup cauliflower, chopped
4 tablespoons raw apple cider vinegar
6 tablespoons olive oil
1 teaspoon maple syrup

Recipe Directions for corn and cabbage salad

  1. cook corn in boiling water for 3-4 minutes. set aside to cool.

  2. chop other vegetables and combine in large bowl.

  3. cut the kernels off the cooled corn and add to other vegetables.

  4. add raw apple cider vinegar, olive oil and maple syrup and combine well.

  5. let marinate for 1-2 hours in the fridge.

  6. serve and enjoy!
