this is from Joy of Cooking; I used a cast-iron wedge pan to bake them. I did add a pinch of extra butter in each wedge section. Probably should have added that to the total calorie count. Boo hoo!

Recipe Ingredients for Corn Bread Wedges

1 1/4 cups cornmeal
3/4 cups flour
2 1/2 tsp baking powder
2 tbs sugar
3/4 tsp salt
1 egg
2 tbs melted butter
1 cup skim milk

Recipe Directions for Corn Bread Wedges

cook according to Joy of Cooking instructions -- mix dry well, beat egg, milk, butter. Gently mix; don't overmix.
