Light, sweet cornbread perfect with braised summer vegetables, black-eyed peas, or BBQ.

Recipe Ingredients for Corn Bread (a la Vegetarian Epicure)

1 1/4 cups all purpose flour
3/4 cups yellow cornmeal
5 tsp baking powder
3 tbsp sugar
3/4 tsp salt
1 egg
1 cup milk
2 tbsp butter, melted

Recipe Directions for Corn Bread (a la Vegetarian Epicure)

  1. Preheat overn to 350F

  2. Combine dry ingredients.

  3. Beat milk and eggs.

  4. Add milk-egg mixture with butter to dry ingredients.

  5. Mix well.

  6. Pour into greased 9" pie pan or cake pan.

  7. Bake 30 to 35 minutes until golden brown.

  8. Serve hot with lots of butter.
