Used Source Dessert - Lemon Meringue low fat yogurt - 1 cup / recipe is very moist

Recipe Ingredients for Corn Bread

1 cup white flour
1 cup cornmeal
2 tbsp honey
1/2 tsp baking soda
1/2 tsp baking powder
250 g Light Yogurt
2 eggs

Recipe Directions for Corn Bread

  1. Preheat oven 400 degrees F

  2. Lightly grease pan - 8 x 8

  3. Bake for 15 minutes

  4. Beat eggs, add yogurt, honey and lemon extract

  5. Mix dry ingredients in separate bowl, make well

  6. Pour in liquid mixture ~ stir

  7. Do NOT overmix or batter will be tough - mix just enough until well blended.

  8. keep a check on bake time - done when centre bounces back and/or toothpick comes out clean. Original recipe said 20-25 minutes but mine does not take that long in my oven
