An bit of an indulgence that can be made more austere by reducing the quantity of butter and sugar by about half.

Recipe Ingredients for Corn Bread

1/2 cup all-purpose flour
1/2 cup corn flour
1 cup corn meal
3 tbsp sugar
1 tbsp baking powder
1/2 tsp salt
1 cup lowfat milk
2 eggs
1/4 cup butter, melted

Recipe Directions for Corn Bread

Combine dry ingredients. Add milk, eggs and butter and stir until just mixed. Pour into a greased 9x9 pan and bake at 425 for 20 minutes.
