Made with cottage cheese instead of buttermilk.

Recipe Ingredients for Corn Bread

1 1/2 cups cottage cheese
2 eggs
1/2 cup milk
1 1/2 cup cornmeal
1 tbsp sugar
1 tsp salt
1 can creamed corn
1/2 cup oil

Recipe Directions for Corn Bread

Place eggs and cottage cheese in food processor; process until smooth. Stir in cornmeal, sugar, salt, and creamed corn. In the mean time, heat iron skillet coated with oil in oven at 375 degrees until hot. Pour batter into hot skillet. Bake for about 20 minutes or until fork in center comes out clean.
