Very moist, cake-like, corn bread. Goes great with soup.

Recipe Ingredients for Corn Bread

2 cups Flour
1 1/2 cups corn meal
6 tablespoons sugar
2 tablespoons baking powder
1 1/3 cups yogurt, non fat
2 tablespoons skim milk
1/2 cup butter, unsalted
3 large eggs
15 oz corn, creamed

Recipe Directions for Corn Bread

  1. Preheat oven to 425

  2. Grease 9 x 13 cake pan

  3. In Medium bowl, combine flour, cornmeal, sugar, and baking powder.

  4. In a small bowl, wisk together yogurt, milk, melted butter, eggs, and corn.

  5. Make a well in the center of the cornmeal mixture and pour wet ingredients in the well. Stir until just moistened.

  6. Spread batter evenly into greased pan.

  7. Bake until golden & toothpick inserted int he center comes out clean (about 25-30 minutes)
