1/2 the "Better for you cornbread " recipe with a few adjustments

Recipe Ingredients for Corn Bread

1 cup cornmeal
1 cup whole wheat flour
2 tablespoons fructose
2 t baking soda
3/4 t salt
2 eggs
1 cup lowfat yogurt

Recipe Directions for Corn Bread

  1. Mix the dry ingredients well.

  2. Add the yogurt and beaten eggs.

  3. Gently mix just until combined.

  4. Do not overmix!

  5. Bake in a greased 8 x 8 pan at 400 F for 20 - 25 minutes
