Great for breakfast or as a side dish. Makes 18 muffins.

Recipe Ingredients for Corn Bread Muffins

1/2 c Margarine
2 large Eggs
3/4 c Sugar
2 c Flour
3/4 tsp Salt
1 3/4 tsp Baking Powder
3/4 c Corn Meal
1/4 c Instant Dry Milk
3/4 c Water

Recipe Directions for Corn Bread Muffins

Combine all ingredients with mixer on low speed. Spoon into muffin tin. (I like to use cupcake liners as it makes it easier to take them on the go.) Bake at 375 for 25 minutes or until golden brown.
