Corn, Black Bean and Tomato Salsa

Recipe Ingredients for Corn, Black Bean and Tomato Salsa

2 tbsp olive oil
1/3 cup olive oil
1 onion, chopped
2 cups corn
1/4 cup cilantro, chopped
31 oz black beans, canned, drained and rinsed
3 tomatoes, cored, seeded and chopped
2 tbsp red wine vinegar
2 tsp Dijon mustard

Recipe Directions for Corn, Black Bean and Tomato Salsa

  1. Preheat oven to 400 degrees. Warm 2 tbsp oil in a large ovenproof skillet over medium heat. Add onion and cook, stirring, until softened. Stir in corn and cook until tender. Transfer to oven and roast, stirring often, until vegetables are browned, about 20 minutes. Transfer to plate to cool.

  2. In a bowl combine corn mixture, cilantro, beans and tomatoes. In another bowl mix vinegar, mustard and salt and pepper to season. Slowly add 1/3 cup oil, whisking until blended and thickened. Pour over corn mixture. Stir well and season with salt and pepper if desired.
