Modified from a no-cook recipe I saw online.

Recipe Ingredients for Corn & Black Bean Salad

14 oz black beans
1 cup corn, frozen
1/2 red bell pepper, chopped
1/4 cup red wine vinegar
2 tbsp olive oil
1/2 tsp cumin
1/2 tsp chili powder
1 tsp sugar
1/4 tsp salt

Recipe Directions for Corn & Black Bean Salad

  1. Lightly coat skillet with oil (use spray). Heat skillet over medium-high heat.

  2. Stir-fry beans, corn and red bell pepper, just to heat corn through and soften pepper.

  3. Combine vinegar, oil, and seasonings in a bowl. Toss warm vegetables in the dressing.
