Makes a tasty salad as well as a salsa for corn chips.

Recipe Ingredients for Corn and Black Bean Salad

1 cup frozen corn, cooked
14 1/2 oz diced tomatoes with green chilies, drained
15 oz black beans, drained, rinsed
1/4 cup onion, chopped
1 tbsp fresh lime juice
1/2 tbsp canola oil
1/4 tsp kosher salt
1/4 tsp ground cumin
1/8 tsp pepper
1/4 tsp minced garlic

Recipe Directions for Corn and Black Bean Salad

  1. Stir together corn and remaining ingredients. Refrigerate at least 1 hour.

  2. Round out meal with 4 ounces of grilled fish, skinless poultry, or meat and mixed greens with around 100 calories of dressing.
