Great for leftover corn beef and or potatoes. Gary makes it best. Do not overcook the eggs.

Recipe Ingredients for Corn beef, potatoe and egg scramble

3 ounce corned beef
3 large eggs
2 tbsp onions, chopped
1 cup potatoe, diced
1 bell pepper, chopped
2 ounce chedder cheese

Recipe Directions for Corn beef, potatoe and egg scramble

A leftover baked potato is best. If using a fresh potatoe, dice and cook in no cal cooking spray til tender. Add other ingredients (except cheese) and cook til tender. Add cheese at end til mixed and melted. Other meats may be substituted for the corn beef, bacon, ham, steak chicken etc
