Mexican inspired bean salad perfect for picnics, easy to assemble and won't wilt if left overnight!

Recipe Ingredients for Corn and Bean Salad with Cilantro Lime Dressing

0.25 cup Beans, Kidney, Red, Mature Seeds, Canned
0.24 cup Corn, Sweet, Yellow
1/4 cup Coriander Leaves
1 1tsp Olive Oil
0.5 cup Peas Chick
1 serving Lime Juice
1/4 tsp Coarse Salt
1 tsp Cumin Seed

Recipe Directions for Corn and Bean Salad with Cilantro Lime Dressing

  1. Grind coarse salt with mortar and pestle, add olive oil, cumin, coriander seed and optional red pepper flakes. Grind down and add about 3 tbsp of lime juice for your dressing.

  2. In salad bowl mix corn, beans, chickpeas, and fresh cilantro. Toss with your dressing and voila!

  3. Even better if left to sit in the refrigerator for a few hours.
