Use low-sodium bacon for lower salt intake with this recipe

Recipe Ingredients for Corn, Bacon, and Potato Chowder

1/2 pound bacon, cooked and broken in small pieces
1 small onion, diced
3 T flour
4 c 2% milk
1/2 pound corn, frozen
1 pound potatoes, peeled and cubed and simmered until tender
1 pepper to taste
1 parsley to taste
1 paprika to taste

Recipe Directions for Corn, Bacon, and Potato Chowder

  1. Cook bacon in microwave (about 8 pieces) and crumble into smaller pieces.

  2. In 1 T oil, cook diced onion for about 5 minutes.

  3. Add flour to onion and cook for about 2-3 minutes on lower heat, stirring constantly.

  4. Heat milk in the microwave then slowly stir in the milk using a whisk or a nice flat wooden spoon.

  5. Turn up the heat to medium and bring to a boil, stirring constantly.

  6. Turn the heat down, but make sure it's still simmering. Cook an additional minute to thicken the base of the soup.

  7. Add corn, potatoes, bacon, salt and pepper.

  8. Garnish with paprika and parsley.
