Recipe Ingredients for Corn, Avocado & Tomato Salad

2 tbsp extra virgin olive oil
1 tbsp fresh lime juice
1 tbsp lime zest
1/4 cup cilantro, minced
1/4 tsp salt
1/4 tsp black pepper
2 1/2 cups corn, fresh, scraped from approx. 5 ears
1 1/2 cups avocado, diced
1 pint cherry tomatoes, quartered
1/2 cup finely diced red onion

Recipe Directions for Corn, Avocado & Tomato Salad

  1. In a large bowl, whisk together oil, lime juice, cilantro, salt & pepper

  2. Add corn, avocado, tomatoes and onion and toss to mix. Serve at room temperature.
