Recipe Ingredients for Corky's Quinoa

1 cup Quinoa
15 oz Black Beans
1 can (12 oz) yields Corn, Sweet, Yellow
4 oz Green Chillies
10 oz Tomatoes
2 clove Garlic
1 serving Ground Cumin Spice
24 oz Extra Lean Ground Beef
4 serving Salsa
12 oz Chicken Broth
0.5 cup, chopped Onions

Recipe Directions for Corky's Quinoa

  1. In a sauce pan, cook 1 cup quinoa and 1 (12oz) can of chicken broth add enough water to the broth to make 2 cups of liquid (~4oz). Cook according ot Quinoa directions.

  2. In large frying pan over medium heat, crumble ground beef and onions together and brown. Add salt and pepper to taste.

  3. Drain Back beans, corn, chillis, and tomatoes. Add to the browned ground beef mixture. heat on low. Add cooked quiona and salsa. Heat until warm. Serve warm.

  4. can be served naked or with tortilla.
