Recipe Ingredients for Coriander Tabbouleh Salad with Shrimp

35 g bulgur (cracked wheat), uncooked
35 g quinoa
1 cups boiling water
1 tablespoon olive oil
2 tablespoons fresh lemon juice
1/2 cucumber, peeled and chopped
50 g chopped green onions
30 g chopped fresh parsley
3 g ground coriander
3 g minced fresh ginger root
1 salt and pepper to taste
10 large shrimp - peeled and deveined

Recipe Directions for Coriander Tabbouleh Salad with Shrimp

  1. Place bulgur in a large bowl, and pour the boiling water and olive oil over it. Stir, cover, and let stand for 15 to 20 minutes.

  2. When all of the water has been absorbed and the bulgur is tender, stir in the lemon juice, cucumber, green onions, parsley, and mint. Season with coriander, ginger, salt and pepper. Garnish with shrimp.
