Recipe Ingredients for Coriander Boneless Skinless Chicken Thighs with Quinoa, Corn and Peppers

1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/2 teaspoon cracked black pepper
1 tablespoon olive oil
4 ears of corn on the cob, kernels cut from cob
1 chili pepper, chopped
1 cup quinoa, rinsed and drained
1 tablespoon butter
2 tablespoons chopped fresh cilantro leaves
3 tablespoons lime juice
1 tablespoon olive oil
1 small onion, chopped
3 cloves garlic, minced
2 cups chicken broth

Recipe Directions for Coriander Boneless Skinless Chicken Thighs with Quinoa, Corn and Peppers

  1. ? In large skillet, sauté corn and peppers in olive oil for 3 to 4 minutes or until vegetables are slightly softened. Set aside.

  2. ? Mix rub ingredients together; rub on thighs. In large skillet, sauté thighs in olive oil over medium heat for 2 to 3 minutes per side. Add onion and garlic; continue sautéing for 2 to 3 minutes or until soft and lightly browned.

  3. ? Add chicken broth, quinoa and butter to chicken thighs simmer for 15 to 20 minutes or until broth is absorbed and chicken is fork-tender with no hint of pink.

  4. ? Stir in sautéed vegetables, cilantro and lime juice. Serve thighs with vegetables on the side.
