Recipe Ingredients for Coriander, Barley, Leek Soup

1 c BARLEY
2 tbsp olive oil
2 onions
3 leeks
1 lb ground turkey
2 c beef stock
7 c chicken stock
1 c water
1 1/2 c rice wine
2 tbsp cilantro

Recipe Directions for Coriander, Barley, Leek Soup

  1. stir barley into boiling water, simmer for 30 minutes, covered.

  2. heat olive oil in large stock pot over med-high heat. add chopped onions and sliced leeks (well-washed). saute until tender.

  3. add turkey, cook til heated through.

  4. add stock, water, barley. lower heat, cover, cook 1 hour.

  5. add rice wine, cilantro or ground coriander to taste, cracked pepper. (my personal suggestion: nix the wine, or use much less. gives it a sweet flavor that is fine, but not great). cook about 10 more minutes.
