240 cals for a serving of this soup, and you can use up that package of baby bellas you bought and are sitting in the fridge before your boyfriend yells at you. Tastes very rich because of the sherry and half and half, good if you want to live a little with no consequences.

Recipe Ingredients for Cordie's Cream of Portabella

226 g portabella mushrooms
1/2 large onion
1 1/2 tbsp olive oil
3 cups vegetable broth
1 tbsp flour
70 g dry sherry
1 pinch salt
1 pinch black pepper
1 dash oregano
1 dash thyme
3/4 cup peas
3/4 cup half and half

Recipe Directions for Cordie's Cream of Portabella

  1. Sautee chopped onions in .5 tbsp of the oil until tender.

  2. Add mushrooms and other 1 tbsp of oil, cook until tender.

  3. Mix the flour and sherry into a cup of the vegetable stock until the flour disappears, then add this and the rest of the broth to the mushrooms.

  4. Bring to a boil, lower heat and simmer for 5-10 minutes or until you get impatient.

  5. *the rest of the instructions are designed for single living - alter as desired* - Transfer to blender and blend the bloody hell out of it, and put what you aren't going to eat in the fridge.

  6. When ready to eat, put 1.5 cups of mushroom soup in a small pan with 1/4 cup of half and half and 1/4 cup of peas. Stir it until it is all one consistency and heat to your liking (don't boil).

  7. This will probably feed more people than 3 in a first course type scenario- I love this soup so I eat a full bowl of it.
