Recipe Ingredients for coquilles st. jacques

1/4 cup wine
1 pinch thyme
2 T butter
3 green onions,diced
1/2 t bay leaf
1 parsley sprig
16 shrimp
4 oz mushrooms,diced
1 T lemon juice
1 1/2 T flour
3 potatoes, mashed
1/2 cup saltine crackers

Recipe Directions for coquilles st. jacques

med sauce pan heat 1/4 cup water,wine,thyme,1butter,onion, bay leaf and parsley.add shrimp and simmer 2-3 minutes.strain and save broth set aside shrimp.in frypan saute mushrooms in 1 T butter lemon juice salt and pepper.simmer 5 miutes drain butter into broth mixture set aside mushrooms.put broth mixture into frypan add flour and water to thicken. add shrimp and mushrooms. seperate into 2 oven proof dishes.put mashed potatoes around edge of bowl. cover the middle with cracker crumbs.broil until browned
