Recipe Ingredients for Coq au Vin

1/4 pound bacon, thickly sliced
3 cups mushrooms, sliced
3 carrots, chopped
1 1/2 cups pearl onions, peeled
2 cloves garlic, minced
3 pounds chicken pieces, skinless, boneless, all fat removed
2 tbsp. all purpose flour
26 ounces red wine (preference: Rothchild's Merlot)
2 tbsp liquor (preference: St. Remy Napoleon Brandy)
2 tbsp. tomato paste
1 2/5 ounces onion soup mix (1 pkg)

Recipe Directions for Coq au Vin

  1. In a large, heavy bottomed pot, over medium-high heat, saute half the bacon with mushrooms, carrots, pearl onions and garlic until lightly browned. Spoon out vegetables and reserve.

  2. Add remaining bacon and chicken pieces to pot and cook until chicken is browned.

  3. Dust with flour and cook for 2 additional minutes.

  4. Add wine and brandy. Use wooden spoon to scrape bits from bottom of pot.

  5. Stir in tomato paste, onion soup mix and reserved vegetables.

  6. Bring to a boil; reduce to a simmer. Cover and simmer until chidken is thoroughly cooked and tender, about 45 minutes.

  7. Serve over rice as a main course.
