Recipe Ingredients for Coq au Vin

16 oz Fresh Boneless Skinless Chicken Breasts
4 serving Garlic Cloves
1 small Onions
3 potato medium (2-1/4" to 3-1/4" dia) Potatoes, Red, Flesh And Skin
3 medium Carrots
2 tbsp Light Butter with Canola Oil
24 fl oz Wine, Table, Red
3 oz Mushrooms Sliced

Recipe Directions for Coq au Vin

  1. Brown 4 chicken breasts in a large skillet. When browned (about 4 minutes per side), place in a 9x13x2 in. casserole.

  2. Peel garlic, slice onion thinly, peel and quarter potatoes, peel carrots and cut in pieces. Arrange vegetables around chicken breasts.

  3. Drain any oil from skillet. Add butter, wine, and mushrooms with liquid. Scrape browned bits from bottom of skillet. . Pour over chicken.

  4. Cover and bake for 2 hours at 325. Serve as is or with rice.
