No alcohol so this version is diet-friendly! Serve over noodles or with crusty bread.

Recipe Ingredients for Coq au no Vin (no alcohol)

1 tablespoon canola oil
2 carrots, chopped
1 onion, (medium) chopped
8 ounces mushrooms
2 cloves garlic, crushed
2 pounds chicken thighs, skin removed
2 bacon
1 1/2 cup white grape juice
3 tablespoons flour
1 3/4 cups chicken broth
1/4 teaspoon salt
1 tablespoon dried parsley

Recipe Directions for Coq au no Vin (no alcohol)

  1. In nonstick 12-inch skillet, heat oil over medium-high heat until hot. Add carrot, onion, and mushrooms; cook 15 minutes or until vegetables are lightly browned, stirring. Add garlic and cook 30 seconds, stirring often. Remove skillet from heat.

  2. Meanwhile, heat nonstick 5- to 6-quart Dutch

  3. oven over medium-high heat until hot. Add chicken thighs and bacon, and cook 12 to 13 minutes or until chicken is tender and golden, turning chicken over halfway through cooking time. When bacon is browned, transfer to paper towels to drain; crumble when cool.

  4. Stir white grape juice into Dutch oven with chicken; heat to boiling. Boil 1 minute.

  5. In 2-cup liquid measuring cup, with wire whisk or fork, mix flour with broth until blended. Add broth mixture, salt, and mushroom mixture to Dutch oven; heat to boiling over medium-high heat. Reduce heat to medium; cook 5 minutes or until chicken is cooked through. Sprinkle with crumbled bacon and garnish with parsley.
