From cdkitchen. I've adapted it so there's less salt. Makes 3 quarts when complete. When I made this I did not express the liquid from the pulp. Instead I served it up as a thick soup (blending it until nearly smooth). It tasted great.

Recipe Ingredients for Copycat V8 Juice

8 quarts water
4 lbs tomatoe, chopped
4 cup celery, chopped (1 whole bunch)
8 jalapeno peppers, chopped
1 cup vinegar
3 bay leaves
2 tablespoons oregano
1 large onion, chopped
9 cloves garlic, pressed (1 whole garlic head)
2 tablespoons salt
4 tablespoons sugar

Recipe Directions for Copycat V8 Juice

  1. In a large pot, combine all ingredients except the sugar, bring to a boil, and cook at a steady boil for 2 hours.

  2. Remove from heat and strain through a relatively fine mesh, making sure to express all the liquid you can.

  3. Discard the pulp, return the liquid to the pot, and boil for another couple of hours, or until the liquid is reduced to roughly three quarts. Add four tablespoons of sugar, remove from heat, stir, and let cool.
