Recipe Ingredients for Cook's Illustrated Poached Salmon with herb-caper vinaigrette

14 oz fresh salmon
1/3 c white wine
5 tablespoons fresh herbs
1 1/2 tablespoons capers
1/2 tablespoons honey
1 tablespoon olive oil
1 tablespoon chopped shallot
1 teaspoon lemon juice
1 pinch salt
1/4 teaspoon fresh ground pepper

Recipe Directions for Cook's Illustrated Poached Salmon with herb-caper vinaigrette

  1. separate herbs from stems and finely chop the leaves. Set aside stems to use in poaching liquid.

  2. chop shallot and put some in medium bowl with chopped herbs. Add honey and capers to this mixture.

  3. Fill covered skillet with 1/3 cup water and 1/3 cup wine. Add herb stems and remaining shallot

  4. slice 1 lemon into quarter inch slices and arrange in bottom of skillet. Place salmon fillets on top of lemon slices.

  5. Turn heat to med-high and bring to a simmer. Then, turn to low and cover skillet. Poach for 10-15 minutes until fish is just cooked. remove fish and lemon slices from pan and set aside, covered in foil.

  6. turn heat to high, and reduce poaching liquid to 2 tablespoons. Strain out solids and add liquid to bowl with herbs, capers and honey. Whisk to incorporate.

  7. Place fish on serving platter or plates, top with dressing.
