Recipe Ingredients for Cooking Thin's Cauliflower Mash Potatoes

8 cups cauliflower florets
1/2 cup nonfat buttermilk
1 pound Yukon gold potatoes
2 tablespoons salt
3/4 cup 1% milk
1 tablespoon butter
1 tablespoon pepper
2 green onions, chopped

Recipe Directions for Cooking Thin's Cauliflower Mash Potatoes

  1. steam cauliflower over boiling water, covered for about 15 minutes.

  2. transfer to food processor; add buttermilk and 1/4 cup of the milk, and puree until very smooth, about 2 minutes.

  3. cook potatoes.

  4. heat over medium heat to dry, about 2 minutes.

  5. Mash with potato masher. Add cauliflower puree, 1/4 cup milk, salt, pepper. Stir to blend and heat over low heat, adding more milk as needed for creamy consistency.

  6. Stir in butter and the scallions.
