Recipe Ingredients for Cooking Light Chicken Chilaquiles

2 c. shredded cooked chicken breast
1/2 c. chopped green onions
1/2 c. low fat cheese (2 oz, shredded) (monterey jack with jalapenos)
2 T. grated parmesan cheese
1 t. chili powder
1/4 t. salt
1/4 t. black pepper
3/4 c. 1% low fat milk
1/4 c. chopped fresh cilantro
11 oz. tomatillos, drained
4 1/2 oz. chopped green chiles
12 corn tortillas (6 inch)
1 cooking spray

Recipe Directions for Cooking Light Chicken Chilaquiles

  1. Preheat oven to 375 F.

  2. Combine chicken, onions, 1/4 c. Monterey Jack cheese, parmesan, chili powder, salt, and pepper in a medium bowl.

  3. Place milk, cilantro, tomatillos and green chiles in a food processor, process until smooth.

  4. Heat tortillas according to package directions. Pour 1/3 c. tomatillo mixture into bottom of an 11x7 inch baking dish coated wtih cooking spray. Arrange 4 tortillas in dish, and top with half of the chicken mixture. Repeat layers with remaining tortillas and chicken mixture, ending with tortillas.

  5. Pour remaining tomatillo mixture over tortillas; sprinkle with remaining Jack cheese. Bake at 375 F for 20 minutes or until bubbly.

  6. Yield: 4 servings

  7. Serving size: 1 1/2 cups
