Makes 24 servings



Divide bread flour for adding (2 3/4 & 1/4 cups) add salt after first resting Don't add any more flour than needed

Recipe Ingredients for Cooking Light Baguette

2 1/4 tsp yeast (1 packet)
1 1/4 cups water (100-110)
3 cups bread flour
1 tsp salt

Recipe Directions for Cooking Light Baguette

  1. Dissolve yeast in warm water. let stand 5 minutes

  2. Add 2 3/4 cups flour for a soft dough

  3. Cover and let stand 15 minutes

  4. Knead in salt, adding remaining flour 1 tbsp at a time

  5. Place dough in oiled bowl, cover, let rise in warm (85) place for 40 minutes.

  6. Punch down and rest 5 minutes

  7. Divide in half.

  8. Roll each half into 12 inche rope, place on baking sheet sprinkled w cornmeal. Cove r& let rise 20 minutes.

  9. Pre-heat oven to 450.

  10. Cut 3 slashes in each loaf. Bake for 20 minutes.
