Recipe Ingredients for Cookies, Pineapple Applesauce Nut Breakfast Snack

1/2 cup butter
1/2 cup applesauce
3/4 cup splenda brown sugar
1/2 tsp vanilla
14 oz crushed pineapple in juice
2 cups whole wheat flour
1.33 cups all-purpose flour
3/4 cup Milk Powder Skim Instant
2 tsp baking soda
2 tsp cinnamon
3/4 tsp salt
3.33 cups quick-cooking oatmeal
1 cup dates, chopped
2 cups pecans, chopped

Recipe Directions for Cookies, Pineapple Applesauce Nut Breakfast Snack

  1. IN very large bowl, cream butter, sugar, then add applesauce. Add vanilla and pineapple (one 14-oz can including juice)

  2. In separate bowl mix flours, milk powder, baking soda, cinnamon, and salt. Stir into the butter mixture.

  3. Stir in oatmeal, dates, and nuts until well-combined.

  4. Drop by rounded spoonfuls onto greased baking sheet. Bake at 350 degrees for 14 minutes (fat cookies).

  5. Makes 36 large fat cookies. Squash down if you wish - and they do not spread at all.
