Recipe Ingredients for Cookies: Peanut Butter Chocolate Chip (Gluten Free)

1 1/2 cups Oat Flour
8 tbsp Unsalted Butter or Margarine, softened
1/2 cup Old Fashioned Oats
3/4 cup Smooth Peanut Butter
3/4 cup Light Brown Sugar
2 tbsp Granulated Sugar
1 Egg
1 tsp Vanilla Extract
2 tsp Baking Powder
1 tsp Baking Soda
1 cup Chocolate Chips
1/2 tsp Salt

Recipe Directions for Cookies: Peanut Butter Chocolate Chip (Gluten Free)

  1. Preheat your oven to 350F.

  2. Cream Butter, Sugars, and Peanut Butter together.

  3. Beat egg and vanilla into butter mixture.

  4. In a bowl or gallon bag, combine the flour, oats, powder, and soda and mix well.

  5. Add dry ingredients slowly to butter mixture.

  6. Fold in Chocolate Chips.

  7. Place cookies onto parchment paper lined cookie sheet.

  8. Bake until no longer shiny on top about 10-14 minutes.

  9. Cool on cookie sheet for 5 minutes before transferring to cooling rack.

  10. Optional: Cool dough for 12-24 hours in the refrigerator before baking. Cookies will take longer to bake. (Closer to 14 minutes.)
