These cookies are a great breakfast-to-go with a glass of milk. Each substantial cookie contains about 250 calories. Try adding 1/2 teaspoon Chinese Five Spice powder along with the cinnamon.

Recipe Ingredients for Cookies: Marathon, Modified, cut in half

1 cups rolled oats (not instant oats)
1/2 cup whole wheat pastry flour
1/2 teaspoon cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
7 1/2 ounce can white or red beans, rinsed & drained
2 tablespoons olive oil
1/2 cup brown sugar
1/2 large egg
1/2 teaspoon vanilla extract
30 grams chopped dates
15 grams slivered almonds (or a total of 1/3 cup mixed fruit and nuts)

Recipe Directions for Cookies: Marathon, Modified, cut in half

  1. Preheat the oven to 350F.

  2. Line a baking sheet with parchment paper.

  3. Pulse the oats in a food processor until it forms a ragged flour.

  4. Add to a large bowl along with flour, cinnamon, Chinese five spice (if using), baking powder, baking soda, and salt.

  5. Pulse beans and oil in processor until creamy.

  6. Add sugar, egg, and vanilla. Pulse until well combined.

  7. Pour wet ingredients into large bowl with flour mixture. Stir until mixture begins to come together. Add dates and nuts.

  8. Shape into 8 balls and flatten slightly.

  9. Bake 12-15 minutes or until just beginning to firm up.

  10. Cool on wire rack. Freeze.
