Adapted from paxye.com/blog/ Substituting 1/4 cup chocolate chips for the 1/2 cup dried fruit will keep calorie count the same. If using just 1/4 cup of either dried fruit, calorie count will be 338 per cookie.

Recipe Ingredients for Cookies: Giant Breakfast

1 1/3 cup Oatmeal
1/4 cup chopped dates
1/4 cup craisins
1/4 cup flour
1 cup non-fat powdered milk (dairy or soy)
1/4 cup sugar
1 tsp baking powder
1 pinch of salt
1 tsp cinnamon
1 cup Apple Sauce
1 tsp vanilla

Recipe Directions for Cookies: Giant Breakfast

  1. Mix dry ingredients. Add applesauce and vanilla and mix until you have a wet dough? you can add more apple sauce if you'd like a lighter cookie.

  2. Make 5 mounds on two parchment paper lined baking sheets and bake in preheated 350 degree oven for about 15 min?

  3. Eat while still a bit warm?

  4. To make ahead, mix the dry ingredients and seal well. To prepare, add 1/5 mix with a little less than 1/4 cup applesauce and 1/4 teaspoon vanilla. Bake as directed.
