Recipe Ingredients for Cookies and Cream Cupcakes

1 c unsweetened soy milk
1 tsp apple cider vinegar
3/4 c sugar
1/3 c canola oil
1 tsp vanilla extract
1/2 tsp almond extract
1 c flour
1/3 c cocoa powder
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
9 servings Newman O's cookies
1/4 c shortening
1/4 c Earth Balance butter
1 3/4 c confectioners' sugar
3/4 tsp vanilla extract
1/8 c unsweetened soy milk

Recipe Directions for Cookies and Cream Cupcakes

  1. Preheat the oven to 350 F and line muffin pan with paper or foil liners.

  2. Whisk together the soy milk and vinegar in a large bowl, and set aside for a few minutes to curdle. Add the sugar, oil, vanilla extract, and almond extract to the soy milk mixture and beat until foamy.

  3. In a separate bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt. Add in two batches to the wet ingredients and beat until no large lumps remain.

  4. Mix into the batter 1 c (about 10 cookies--chop, then measure) of coarsely chopped vegan chocolate cream-filled sandwich cookies like Newman-O's.

  5. Pour into liners, filling three-quarters of the way. Bake 18-20 minutes, until a toothpick inserted into the center comes out clean. Transfer to a cooling rack and let cool completely before icing.

  6. For the icing, beat the shortening and margarine together until well combined and fluffy. Add the powdered sugar and beat for about 3 more minutes. Add the vanilla and soy milk, beat for another 5-7 minutes until fluffy. Stir 1/4 c of finely smashed Newman-O's into the frosting. Ice the cupcakes with a knife, and decorate the top of each cupcake with 1/2 a cookie.
