These cookies are supposed to be so healthy you can eat them for breakfast! I cut down the fat by substituting apple sauce for some of the butter.

Recipe Ingredients for Cookies for Breakfast

1/2 cup butter
1/2 cup unsweetened apple sauce
1 cup light brown sugar, packed
2 eggs
1 1/2 cup whole wheat flour
1 tsp baking soda
1 tsp ground cinnamon
1 tsp vanilla extract
1 salt
3 cups oat, uncooked
1 cup dried apples
3/4 cup chocolate chips
3/4 cup flaked coconut

Recipe Directions for Cookies for Breakfast

  1. preheat oven to 350.

  2. In large bowl, with mixer on medium speed, beat butter and sugars 2 minutes or until creamy, occasionally scraping bowl.

  3. reduce speed to low, beat in eggs, flour, baking soda, cinnamon, vanilla extract, and 1/2 tsp salt just until blended.

  4. Stir in oats and remaining ingredients.

  5. Drop dough by rounded measuring tablespoons, 2 inches apart, onto ungreased cookie sheet.

  6. Bake cookies 14-15 minutes until tops are golden.

  7. Cool cookies on wire racks.
