Mmmm... like the ones you buy but they don't have a zillion grams of trans fat ;)

Recipe Ingredients for Cookie-wiches

1/2 c. whole wheat pastry flour
1/3 c. fiber one cereal, ground to flour
1/3 c. oatmeal, ground
1 egg
1/2 tsp. baking soda
1/4 tsp. salt
4 oz. semi sweet chocolate, chunks
6 tbsp. butter
1/4 c. white sugar
1/2 c. brown sugar
3 c. milk
6 tbsp. sugar
2 oz. semi sweet chocolate, chips, miniature

Recipe Directions for Cookie-wiches

  1. Use the first set of ingredients (flour through brown sugar) to make a 1/2 batch of Ghirardelli choc. chip cookies- 18 cookies for 9 cookie-wiches. Dont forget to add 1 tsp. vanilla, and to melt 4 Tbsp of the butter (creaming the other 2 Tbsp. with the sugar).

  2. Use the milk and sugar to make a full batch of fatfree vanilla "ice cream" also using 2 tsp. vanilla and 1 packet of gelatin (soften in warm water, then heat 30 sec, and pour into milk/sugar on stove).

  3. Freeze till set, not fully solid, whip up (new volume about 6 cups) and fill cookies. Roll edge in mini semisweet chips. Freeze on a tray, then wrap individually in plastic wrap and place in freezer bags.
