Cooked Celery Recipe

This supportive star of soups, stocks and stews used to be a star in and of itself, served with every meal in a special celery vase! Keep the leaves to use wherever you might use parsley and store it wrapped in aluminium foil - it will keep for a month at least this way. Cooked celery makes for a delicate tender side that serves well with anything.

Recipe Ingredients for Cooked celery

1 lb celery
3 tablespoons butter
1 carrot
2 cups vegetable stock
1 tsp bay leaf
1 small onion
1/4 tsp salt
1/4 tsp pepper

Recipe Directions for Cooked celery

  1. Cook the onions, carrot and the aromatics in the butter over a medium heat for about 5 minutes.

  2. Add the celery and cook for another 5 minutes.

  3. Season with salt and pepper.

  4. Add the vegetable stock and cover and simmer until celery is tender, about 20 minutes.

  5. When done remove it and reduce the remaining liquid, enriching with butter if you like, and pouring over the cooked celery.
