A traditional Caribbean dish made with yellow corn meal, okra and coconut can made in advance served with fish or callaloo suitable for vegans and vegetarians.

Recipe Ingredients for Coo coo

1 cup Polenta
1 cup Okra
1 serving Blue Dragon Creamed Coconut Block
1 serving Stock Cubes
1/2 tsp Salt

Recipe Directions for Coo coo

  1. In large saucepan, combine okra and water, stock, creamed coconut and desiccated coconut bring to boil and stir in salt & pepper. Remove from heat; stir in cornmeal until all lumps are dissolved and mixture is smooth.

  2. Return to a medium heat setting and, using wooden spoon, stir until mixture is well blended, slightly stiff, and comes away from sides of pan.

  3. Spoon into lightly greased bowl; let sit about 30 minutes until set.

  4. Cover top of bowl with platter and invert to transfer Coo Coo to serving platter.
