A Ghanian favorite like spinach stew

Recipe Ingredients for Contomle

2 boxes frozen spinach
1/4 cup vegetable oil
1 large fresh tomatoe, sliced
1/2 lb fresh chopped mushrooms
1/3 teaspoon salt
1/8 teaspoon cayenne pepper
1/2 onion
1/4 cup canned tomatoe sauce

Recipe Directions for Contomle

  1. heat pan with oil

  2. add sliced onions and tomatoes and allow to sautee to a puree

  3. add sauce

  4. add spinach (defrosted & drained) and mushrooms, stir

  5. add seasonings to taste and allow to simmer

  6. serve over brown or white rice
