Cononut Snowballs Recipe

Adapted from Colleen Patrick-Goudreau's The Joy of Vegan Baking.

Recipe Ingredients for Cononut snowballs

1 cup margarine
1/4 cup granulated sugar
2 tsp vanilla extract
1 tsp coconut extract
2 cups unbleached all-purpose flour
2 cups shredded coconut
1 1/2 cup powdered sugar

Recipe Directions for Cononut snowballs

  1. Preheat oven to 300 F.

  2. Cream margarine, sugar, vanilla and coconut until light and fluffy. Add the flour and mix until thoroughly combined. Add the coconut and mix until well blended (may have to use hands).

  3. Roll dough into 1 inch balls and place on non-stick cookie sheets 1 inch apart. Bake until they begin to turn golden, about 30 minutes.

  4. Roll the cookies in the powdered sugar while still warm. Allow to cool on racks and serve once cool.
