1 FINELY DICED CARROT
1 large FINELY DICED ONION
1 small FINELY DICED POTATO
1 FINELY DICED GREEN BELL PEPPER
1 cup SALTINE CRACKERS
1 large EGG
1/2 cup TOMATO KETCHUP
2 tbs YELLOW MUSTARD
2 tbs WORCESTERSHIRE SAUCE
1 tsp GARLIC POWDER
1 tsp BLACK PEPPER

Recipe Directions for Connie Jackson's Meatloaf Balls

PREHEAT OVEN MIX WELL BY HAND. ROLL INTO BALLS AND PLACE ON A BAKING SHEET, TOP WITH A TINY AMOUNT OF KETCHUP AND BAKE UNCOVERED IN A 350 DEGREE OVEN FOR 40 MINUTES, OR UNTIL THE MEAT BALLS HAVE A GOLDEN BROWN COLOR AND ARE FIRM TO TOUCH. THIS IS AN EXCELLENT DISH SERVED WITH A SIDE SALAD, AND PROVIDES LOADS OF PROTEIN. THEY ARE EVEN BETTER THE FOLLOWING DAY REHEATED. THEY ARE ALSO WONDERFUL TOPPED WITH CHEESE, PROVIDING AN EVEN HIGHER INTAKE OF PROTEIN.
